Mega Meal Monday - Turkey Tetrazzini
Here's a dish that's hearty and makes 2 9x12 casserole dishes from this ONE easy recipe! In fact, you'll want to hang on to this one for after Thanksgiving dinner!
1 12 oz package spaghetti (we use brown rice shell noodles and I believe our package was either 14 or 16 oz)
1 cup chopped onion
1 cup chopped green pepper
3 Tbs butter
5 1/2 cups cooked, diced turkey or chicken
4 cups grated Monterey Jack cheese (I use 2 cups Monterey Jack and 2 cups Mozzarella)
2 cans cream of mushroom soup OR 3 cups homemade cream sauce (recipe below)
Approximately 1 cup of milk (we use rice milk)
Prepare spaghetti according to directions. Saute onion and green pepper in butter. Mix all ingredients well in a LARGE bowl and divide between 2 9x12 casserole dishes. Cover and freeze.
On cooking day, thaw and bake uncovered at 350 F for about 30 minutes until bubbly and warm all over.
