Turkey ala King
3 strips bacon, diced (we use turkey bacon)
1/2 cup diced onion
1- 4 oz can sliced mushrooms (keep liquid)
2 Tbsp butter
1/2 cup flour
2 tsp salt
1 pint half and half
1 1/4 cup chicken broth
1 tbsp cooking sherry
2 cups cooked, deboned and diced turkey or chicken
2 packages premade individual pie shells or make your own dough and form into muffin tins prepped with cooking spray.
Saute the bacon, onion, mushrooms and green pepper in butter. Blend in flour and salt and cook until bubbly. Remove from heat and stir in half and half, broth, mushroom juice and sherry. Heat to boiling stirring constantly. Stir in the chicken. Freeze in ziploc bags.
On eating day, thaw, heat until warmed through and spoon into pre-baked shells.
Served with salad and freshly steamed broccoli!
