It's Monday and time for another.... what? Polish Alfredo? What's that???
Inquiring minds have asked and I'm willing to tell!
I can thank long-time friend Heather for this recipe. Over 15 years ago she shared it with me. Along the way we've tweeked it and made it a dish everyone loves.
Here's what you need to make enough for 2 BIG batches:
2 cups thinly sliced carrots
2 cups thinly sliced zucchini
2 lbs Turkey Sausage or Kielbasa sliced
1 Quart Half and Half
8 oz Parmesan cheese
1/2 cup - 1 cup Mozzarella cheese
Saute veggies in oil of choice until soft. Remove from heat. Saute sausage until lightly browned. Remove from heat.
Add Half & Half to a pan and mix in Parmesan and mozzarella cheese. Continue to stir and heat until sauce thickens. Season with Garlic and Onion powder to taste. Add veggies and sausage back into pan. Heat on low thoroughly.
From here, you can choose to mix this with the pasta/rice OR let everyone use this sauce to top their own portion of pasta/rice. We serve ours on top of Brown Rice Pasta.
Eat 1/2 of the sauce now and ziploc bag the rest for the freezer. On serving day, just thaw frozen sauce and heat gently on top of the stove.
