Ah, another Chili recipe! This one is a bit different. It's made with chicken and white beans.
It's the perfect meal to make with left over rotisserie chicken and the broth from the bones too!

This recipe adapts well to your tastebuds and what you have available. Feel free to increase or decrease amounts of the meat, beans or veggies as you would like. I personally like more beans, so, I make mine with more.
White Chili - Mega Meal Monday
2 cups Great northern beans (canned or dried. If using dried, prepare them beforehand)
2 pounds shredded COOKED chicken or turkey
2 cups chicken broth (you may need to add some water)
1 cup each grated onion, grated carrots and finely chopped green peppers
1 tsp Chili powder
1 tsp Cilantro
1 tsp salt
Here's the best part - combine all ingredients and divide into portions to be eaten that night and portions to be frozen. Put the portions to be frozen into a ziploc bag, label and freeze. The portion to be eaten can be thrown into the crockpot and cooked until you are ready to eat!
Very tasty served with sour cream and green onions on top!
