After figuring out that I live in their delivery area, I was off placing my order. I had the choice between The Classic or Veggie Box. I would be happy with either, but, seeing as though we have a household of omnivores, I went with Classic. Then, I got to pick 3 out of 5 selections that change weekly. And that was NOT easy!
I choose Dill Crusted Tilapia with Sweet Potato & Cranberry Medley, Apricot Glazed Turkey with Beets and Orzo, and Lamb Cassoulet with Mushrooms. My mouth is watering all over again!
After placing my order, I had to sit back and wait. I received delivery notification on a Monday that my box was in transit and would be delivered that Wednesday. Hmmmm I wondered. Living in the tropics, would my food be good or would it be warm and spoiled?
Here's the box as I received it:
As I opened it, I was amazed at all the insulated padding and the cold - yes COLD - food inside! The ice packs on the bottom were still frozen solid!
Along with the the items I would need to cook all three meals were these wonderful full-colored recipe cards for each meal. Each card listed the tools needed, the ingredients, nutrition information and step by step instructions. It was like having a professional chef standing next to me while I cook!
We are a family of 6. That's 3 "big" eaters, 2 "normal" eaters and 1 Nip Napper. I really thought I'd either make these meals for hubby and I and something else for the kids OR I'd make them all for one meal and let everyone 'graze' and try a little of this and a little of that.
My boys were all googly eyed over the food --- so, it didn't look like hubby and I would be having any romantic dinners of our own. My 12 year old son enthusiastically volunteered to be my assistant chef in making the 3 meals at once. So, that's what we set off to do.
First up, Apricot Glazed Turkey:
This recipe contained turkey breasts, orzo, a beet, a lemon, garlic, edamame, apricot jam, white wine vinegar and Sriracha. Since we are a soy-free household, we omitted the edamame and also kept it tame by leaving out the Sriracha.
Eventhough I'm far from a beet-loving person, I gave it a chance. Here's the proof that I did dice them!
Below is 1/2 of the total amount this recipe made. The turkey breasts were really big and did a good job of filling people up. The other turkey breast not pictured was much bigger than this one! Honestly, if it were just hubby and I , we would have had leftovers!
The taste was VERY good. I'm proud of everyone for trying new things like sauteed beets and Orzo!
Next Lamb Cassoulet:
We LOVE lamb! I've seen some Cassoulet recipes, but, have never had a chance to make one. This one contains lamb, tomatoes, garlic, onion, mushrooms, thyme, panko breadcrumbs, and cannellini beans.
After chopping veggies for both recipes, I set to trimming the lamb. Afterwards it was time to sear it -- yummy!
The remaining steps were easy to follow and this dish went together super quickly.
After topping with the Panko breadcrumbs and olive oil, it went under the broiler to brown the top.
This was so tasty!!! Even my picky eaters liked this one! And, honestly, this recipe with a salad would have been just fine for my crew of 6. If it was hubby and I, we'd have leftovers! As it was, since we ate the above Turkey recipe and this one there was a little leftover.
Dill Crusted Tilapia was saved for another night. This recipe has tilapia, sweet potato, garlic, dill, almonds, cranberries, Parmesan cheese, and dijon mustard.
The most time consuming part of this recipe is the peeling, dicing, boiling and sauteing of the sweet potato. But, it was so worth it because the combination of these flavors was fabulous!
Please excuse the plating, but, this one is a definite winner and there was enough for 4 out of 6 family members who enjoy fish!
Though my review was for the 2 person box, each meal easily feed four of us. I love the convenience of having a special meal box with culinary variety delivered to my door. But, I don't think we are in the right season seeing as we are 2 adults and 4 growing children. If it was just hubby and I, I would consider buying a box once or twice a month!
